Apple Cider Mimosas
Here at Delish, there's no debate: Mimosas are the brunch cocktail. However, as the weather gets colder and we start craving more comforting, autumnal flavors, there is something not quite ideal about drinking a bright, citrusy cocktail on a gray morning in November. Enter: the apple cider mimosa. It's the perfect fall twist on the classic that will give you just another reason to celebrate the season. Serve them at every holiday or fall brunch to really lean into the cozy vibe this season. Here’s what you should know:
What’s in an apple cider mimosa?
You really only need 2 ingredients to make this fall cocktail: apple cider and Prosecco or Champagne. Feel free to make your own homemade apple cider or buy it store bought, just make sure that if you’re using it homemade, make sure to let it cool before incorporating!
We call for cinnamon and sugar to create the delicious cinnamon-sugar rim, but if you’d rather skip it, you totally can (though we highly recommend it).
The best Champagne to use:
When it comes to the Champagne, go for your favorite brand, or consult our list of the best champagnes for mimosas if you need some inspo. No need to splurge, but since champagne is one of the two ingredients in this cocktail, you want to choose one you enjoy drinking.
Variations:
Want to add somethin’ extra to your mimosa? Drizzle some caramel into your glass before adding your mimosa for a caramel apple vibe. Looking for a non-alcoholic drink? Replace the champagne with sparkling grape juice for a drink everyone can enjoy.

Ingredients
- 1
Honeycrisp apple
- 2 tbsp.
granulated sugar
- 1 tbsp.
ground cinnamon
- 1 c.
- 1
(750-ml.) bottle Champagne or prosecco
Directions
- Step 1Cut apple in half, then cut four 1/8" slices. Using the tip of the knife, cut a small diagonal slit in each slice. Reserve remaining apple for another use.
- Step 2On a small plate, combine sugar and cinnamon. Dip champagne flutes in water to wet the rims, then dip in cinnamon sugar mixture.
- Step 3Fill champagne flutes 1/4 full with apple cider, then top off with champagne or prosecco. Top each with an apple slice.
